Description
A cheesy, layered chicken fajita casserole with tortillas that’s perfect for busy weeknights or make-ahead meals.
Ingredients
2 cups cooked shredded chicken
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 medium onion, sliced
1 ½ cups shredded cheese (cheddar or pepper jack)
6 soft flour tortillas
1 tbsp olive oil
1 tsp cumin
1 tsp chili powder
½ tsp garlic powder
Salt and pepper to taste
Instructions
1. Preheat oven to 375°F (190°C).
2. Heat olive oil in a skillet and sauté peppers and onions until soft.
3. Add shredded chicken and season with cumin, chili powder, garlic powder, salt, and pepper.
4. Lightly grease a baking dish. Place 2 tortillas on the bottom.
5. Add half the chicken mixture, then ½ cup cheese.
6. Repeat with another layer of tortillas, remaining chicken, more cheese.
7. Top with final layer of tortillas and remaining cheese.
8. Bake uncovered for 20–25 minutes until bubbly and golden.
9. Let cool slightly, then slice and serve with toppings.
Notes
Make it ahead and refrigerate unbaked for up to 2 days.
Swap in corn tortillas for a gluten-free version.
Pairs well with rice, beans, or salad.
