A cozy and simple creamy chicken mushroom recipe made with tender chicken thighs, rich cream, and garlic mushrooms—perfect for a quick weeknight dinner.
Ingredients
1.5 lbs boneless chicken thighs
8 oz sliced mushrooms
2 cloves garlic, minced
1 small onion, diced
1 cup heavy cream
1 tsp Dijon mustard
1/4 cup grated parmesan
Salt and pepper to taste
1 tbsp olive oil or butter
Instructions
1. Heat oil in a skillet over medium heat. Season chicken with salt and pepper and cook until browned. Remove and set aside.
2. Add mushrooms to the same pan. Cook until golden and reduced. Add garlic and onion; sauté 2 minutes.
3. Pour in heavy cream and mustard. Simmer on low heat.
4. Return chicken to skillet and stir in parmesan.
5. Simmer 5–7 minutes until sauce thickens and chicken is cooked through.
6. Taste and adjust seasoning.
7. Garnish with parsley and serve hot.
Notes
Use chicken breast if preferred, but thighs stay juicier.
Add spinach, thyme, or a splash of white wine for variations.
Serve with pasta, mashed potatoes, or crusty bread.
