Ingredients
2 cups fresh pineapple, diced
1 large cucumber, sliced thin
1/4 red onion, sliced
2 tablespoons fresh mint, chopped
1 tablespoon lime juice
1/4 teaspoon sea salt
Optional: pinch of chili flakes or grated ginger
Instructions
Peel and dice the pineapple into bite-sized chunks.
Thinly slice the cucumber and red onion.
Chop fresh mint and add to a mixing bowl.
Combine pineapple, cucumber, and onion in the bowl.
Drizzle with lime juice and sprinkle with salt.
Toss gently to combine all ingredients.
Add chili flakes or ginger if desired and serve chilled.
Notes
For extra crunch, use Persian cucumbers. Add avocado for creaminess. Best eaten within 24 hours
